6-4oz chicken breast
2 tbsp olive oil
4 slices wheat bread
1/4 c. + 2 tbsp Panko breadcrumbs
Cut bread into crouton size pieces and place into a preheated 250 degree oven for 5-10 minutes. Let cool and place in blender in intervals at the crumb setting until bread crumb consistency.
Put breadcrumbs, Panko, and 1 tbsp of Italian seasoning in one bowl and olive oil in another bowl.
Cut chicken into small, nugget size pieces and place in olive oil. Mix until all the chicken is well coated.
Then put chicken in breadcrumbs and then on baking sheet sprayed with non-stick cooking spray.
Put chicken in preheated 425 degree oven for 8-10 minutes. Take out and turn over all the chicken and put back in for 4-5 minutes or until cooked through.
Per serving (about 10 nuggets, depending on how small or big you cut them)
